THE WINEMAKER JOHN ELLIS & HANGING ROCK WINERY

Chanters Ridge wines are produced by Hanging Rock winemaker, John Ellis.

From the very first vintage, John has used traditional open vat and whole bunch primarary fermentation techniques. Maturation takes place in a mix of 30% new French oak and 70% one and two year old French oak barriques, producing a well balanced wine: the Pinot Noir fruit character and the oak in total harmony.

The award-winning Hanging Rock winery produces a range of premium and table wines using fruit from their Jim Jim Vineyard at Woodend and selected growers around the state of Victoria.

Their wine varieties include Shiraz, Cabernet Merlot, Pinot Noir, Chardonnay, Riesling, Sauvignon Blanc, and the award-winning Macedon sparkling white.
